Walnut-Crusted Salmon

Ingredients
4 (6-ounce) salmon fillets, skin-on or skinless
1/2 cup walnuts, finely chopped
1/4 cup panko breadcrumbs
2 tablespoons fresh parsley, finely chopped
1 teaspoon lemon zest
2 tablespoons Dijon mustard
1 tablespoon pure maple syrup
1 tablespoon olive oil
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
In a small mixing bowl, combine the chopped walnuts, panko breadcrumbs, chopped parsley, lemon zest, and olive oil. Stir well until the mixture resembles coarse wet sand.
In a separate small bowl, whisk together the Dijon mustard and maple syrup until smooth.
Pat the salmon fillets dry with a paper towel. Place them on the prepared baking sheet, skin-side down (if applicable). Season the tops evenly with salt and black pepper.
Brush the tops of each fillet generously with the mustard glaze. Spoon the walnut mixture over the glaze, pressing gently with the back of a spoon to ensure the crust adheres to the fish.
Bake in the preheated oven for 12 to 15 minutes, or until the salmon is opaque and flakes easily with a fork. Serve immediately.
