Turkey Taco Meal-Prep Bowls

Ingredients
- 1 lb lean ground turkey
- 1 tablespoon olive oil
- 1 packet (1 ounce) low-sodium taco seasoning
- 1/2 cup water
- 2 cups cooked brown rice
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup frozen corn, thawed
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely diced
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the ground turkey and cook until browned, breaking it apart with a spatula as it cooks.
- Stir in the taco seasoning and water. Reduce the heat to simmer and cook until the liquid has thickened and the turkey is fully coated. Remove from heat.
- Divide the cooked brown rice evenly among four meal-prep containers.
- Top the rice in each container with equal portions of the cooked ground turkey, black beans, corn, cherry tomatoes, and red onion.
- Garnish each bowl with chopped cilantro and a lime wedge. Seal containers and store in the refrigerator for up to 4 days.
