Sheet Pan Garlic Parmesan Potatoes and Green Beans

Ingredients
- 1 lb baby yellow potatoes, halved
- 1 lb fresh green beans, trimmed
- 3 tbsp olive oil, divided
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese, divided
- 1 tsp salt, divided
- 1/2 tsp black pepper, divided
- 1/2 tsp dried oregano
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C) and lightly grease a large baking sheet.
- In a large bowl, toss the halved potatoes with half of the olive oil, half of the minced garlic, half of the salt, half of the pepper, and the dried oregano.
- Spread the seasoned potatoes in an even layer on the prepared baking sheet. Roast for 15 minutes.
- While the potatoes roast, use the same bowl to toss the trimmed green beans with the remaining olive oil, remaining garlic, remaining salt, remaining pepper, and a quarter cup of the Parmesan cheese.
- Remove the baking sheet from the oven. Push the potatoes to one side and spread the seasoned green beans on the empty half of the pan.
- Return the sheet pan to the oven and roast for another 15 minutes, or until the potatoes are fork-tender and the green beans are crisp-tender.
- Remove from the oven and immediately sprinkle the remaining Parmesan cheese over both the potatoes and green beans. Toss gently on the pan.
- Garnish with chopped fresh parsley and serve warm.
