Italian Chopped Salad with Pepperoncini

Ingredients
- 1 head romaine lettuce, chopped
- 1/2 head radicchio, chopped
- 1/2 cup sliced pepperoncini rings
- 1/4 cup red onion, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 1 (15-ounce) can garbanzo beans, rinsed and drained
- 4 ounces salami, chopped
- 4 ounces provolone cheese, cubed
- 1/4 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
Instructions
- Prepare the vinaigrette by whisking together the olive oil, red wine vinegar, minced garlic, dried oregano, kosher salt, and black pepper in a small bowl.
- In a large serving bowl, combine the chopped romaine lettuce and chopped radicchio.
- Add the pepperoncini rings, thinly sliced red onion, halved cherry tomatoes, and rinsed garbanzo beans to the lettuce mixture.
- Toss in the chopped salami and cubed provolone cheese.
- Drizzle the prepared vinaigrette over the salad and toss well to coat all ingredients evenly.
- Serve immediately or chill briefly before serving.
