Ingredients
1 lb boneless skinless chicken breasts, cut into bite-sized pieces
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon paprika
2 large eggs
2 tablespoons milk
1 1/2 cups panko breadcrumbs
1/2 cup grated Parmesan cheese
Vegetable oil, for frying
Instructions
Cut the boneless skinless chicken breasts into bite-sized pieces and set them aside.
In a shallow dish, whisk together the flour, salt, black pepper, garlic powder, and paprika. In a second shallow dish, beat the eggs and milk. In a third shallow dish, combine the panko breadcrumbs and grated Parmesan cheese.
Dredge each piece of chicken in the seasoned flour mixture, shaking off any excess. Dip it into the egg wash, then coat it completely with the breadcrumb mixture, pressing gently to adhere.
Pour about one inch of vegetable oil into a large skillet or Dutch oven and heat it over medium-high heat until it reaches 350 degrees Fahrenheit.
Carefully place the breaded chicken pieces into the hot oil in batches. Fry for 4 to 5 minutes, turning occasionally, until they are golden brown and the internal temperature reaches 165 degrees Fahrenheit.
Use a slotted spoon to transfer the cooked nuggets to a wire rack or paper towel-lined plate to drain. Serve immediately with your favorite dipping sauces.
