Ingredients
1 lb Pizza Dough (store-bought or homemade), room temperature
1 cup Cooked Chicken Breast, diced or shredded
3/4 cup BBQ Sauce, divided
1 1/2 cups Mozzarella Cheese, shredded
1/2 cup Smoked Gouda Cheese, shredded
1/2 Small Red Onion, thinly sliced
2 tbsp Fresh Cilantro, chopped
1 tbsp Cornmeal (for dusting)
1 tbsp Olive Oil
Instructions
Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven now to heat up.
In a small bowl, toss the cooked chicken with a portion of the BBQ sauce until fully coated.
Sprinkle cornmeal on a pizza peel or baking sheet. Stretch or roll the pizza dough into a 12-inch circle.
Brush the outer crust lightly with olive oil. Spread the remaining BBQ sauce evenly over the dough base.
Sprinkle the mozzarella and smoked gouda over the sauce. Top with the BBQ chicken mixture and red onion slices.
Bake for 12 to 15 minutes, or until the crust is golden brown and the cheese is bubbly and slightly browned.
Remove from the oven, garnish with fresh cilantro, slice, and serve immediately.
