Greek Chicken Souvlaki

Ingredients
- 2 lbs boneless skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup extra virgin olive oil
- 1/4 cup freshly squeezed lemon juice
- 4 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 8 wooden skewers, soaked in water
Instructions
- In a large bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, kosher salt, and black pepper.
- Add the cubed chicken breasts to the marinade, tossing well to ensure every piece is evenly coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours.
- Preheat your grill or grill pan to medium-high heat. While the grill is heating, thread the marinated chicken cubes tightly onto the soaked wooden skewers.
- Place the chicken skewers on the oiled grill grates. Cook, turning occasionally, until the chicken is golden brown, charred on the edges, and cooked through to an internal temperature of 165 degrees Fahrenheit.
- Remove the skewers from the grill and let the chicken rest for a few minutes before serving warm with pita bread and tzatziki.
