Fluffy Buttermilk Pancakes

Ingredients
- 2 cups all-purpose flour
- 3 tablespoons granulated sugar
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon kosher salt
- 2 1/2 cups buttermilk
- 2 large eggs
- 3 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- Unsalted butter or vegetable oil, for cooking
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate medium bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients. Gently fold them together with a spatula until just combined. Do not overmix; a few lumps are fine.
- Heat a large skillet or griddle over medium heat and lightly coat with butter or oil.
- Pour batter onto the skillet using a 1/3 cup measure for each pancake. Cook until bubbles form on the surface and the edges look set.
- Flip the pancakes and cook until golden brown on the other side. Serve immediately with warm syrup and butter.
