Classic Chicken Parmesan

Ingredients
2 large boneless skinless chicken breasts, halved horizontally
1 cup all-purpose flour
2 large eggs
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup olive oil
2 cups marinara sauce
1 1/2 cups shredded mozzarella cheese
1/4 cup fresh basil leaves, chopped
Instructions
Slice chicken breasts in half horizontally to create 4 thin cutlets. Pound them to an even half-inch thickness.
Set up three shallow bowls. Place flour in the first bowl. Beat eggs in the second. Mix panko, Parmesan, garlic powder, salt, and black pepper in the third.
Coat each chicken cutlet first in the flour, then dip into the beaten eggs, and finally press firmly into the breadcrumb mixture until fully coated.
Heat olive oil in a large skillet over medium-high heat. Fry the breaded chicken cutlets for 4 to 5 minutes per side until golden brown and crispy. Transfer to a paper towel-lined plate.
Preheat oven to 400 degrees Fahrenheit. Spread a thin layer of marinara sauce in a baking dish. Place the fried chicken cutlets in the dish. Top each cutlet with the remaining marinara sauce and shredded mozzarella cheese.
Bake for 10 to 12 minutes, or until the cheese is melted and bubbly. Garnish with chopped fresh basil before serving.
