Classic Chicken & Broccoli Casserole

Ingredients
- 2 cups cooked chicken breast, diced
- 4 cups fresh broccoli florets
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1.5 cups whole milk
- 0.5 cup chicken broth
- 1.5 cups sharp cheddar cheese, shredded and divided
- 0.5 cup parmesan cheese, grated
- 1 teaspoon garlic powder
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.5 cup panko breadcrumbs
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F and grease a 9x13-inch baking dish.
- Steam the broccoli florets until tender-crisp, then drain well.
- Melt the butter in a medium saucepan over medium heat, then whisk in the flour to create a roux, cooking for 1 minute.
- Gradually whisk in the milk and chicken broth, continuing to cook and stir until the sauce thickens.
- Remove the saucepan from the heat and stir in half of the cheddar cheese, the parmesan cheese, garlic powder, salt, and black pepper until completely smooth.
- In a large bowl, toss the diced chicken, steamed broccoli, and the cheese sauce together until evenly coated.
- Pour the chicken and broccoli mixture into the prepared baking dish.
- In a small bowl, mix the panko breadcrumbs, the remaining cheddar cheese, and the olive oil together, then sprinkle evenly over the casserole.
- Bake uncovered for 20 to 25 minutes, or until the edges are bubbling and the topping is golden brown. Let rest for 5 minutes before serving.
