Ingredients
- 2 to 3 very ripe bananas, peeled (about 1 1/4 to 1 1/2 cups mashed)
- 1/3 cup melted butter, unsalted
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
Instructions
- Preheat your oven to 350 degrees F (175 degrees C). Butter or lightly spray a 4x8-inch loaf pan with non-stick cooking spray.
- In a large mixing bowl, mash the peeled bananas with a fork until they are completely smooth.
- Pour the melted butter into the mashed bananas and stir well to combine.
- Sprinkle the baking soda and salt over the mixture and stir them in.
- Stir the sugar, beaten egg, and vanilla extract into the banana mixture until well blended.
- Add the all-purpose flour to the wet ingredients and mix gently until just incorporated. Do not overmix.
- Pour the batter into the prepared loaf pan. Bake in the preheated oven for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the loaf pan from the oven and let the bread cool in the pan for 10 minutes. Then, turn it out onto a wire rack to cool completely before slicing.
