Buffalo Turkey Chili Meal-Prep

Ingredients
1 tablespoon olive oil
1 medium yellow onion, diced
1/2 cup chopped celery
2 cloves garlic, minced
1 pound lean ground turkey (93/7)
1 packet (1 ounce) ranch seasoning mix
1/2 cup buffalo sauce
1 can (15 ounces) diced tomatoes, undrained
1 can (15 ounces) white beans, rinsed and drained
1 cup chicken broth
1/4 cup crumbled blue cheese
4 green onions, sliced
Instructions
Heat olive oil in a large pot over medium heat. Add the diced onion and celery, cooking until softened, about 5 minutes. Add minced garlic and cook for 1 more minute.
Add the ground turkey to the pot. Break it apart with a wooden spoon and cook until browned and cooked through, about 7 minutes.
Stir in the ranch seasoning mix and buffalo sauce, ensuring the turkey is evenly coated.
Pour in the diced tomatoes, white beans, and chicken broth. Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer for 20 minutes to meld the flavors.
Remove the chili from heat. Divide the chili evenly among four meal prep containers. Top each container with a sprinkle of blue cheese and sliced green onions before sealing.
