Best Summer BBQ Side Salad

Ingredients
- 2 cups fresh sweet corn kernels
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 large avocado, diced
- 0.5 cup red onion, finely chopped
- 0.25 cup fresh cilantro, chopped
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lime juice
- 1 teaspoon honey
- 0.5 teaspoon sea salt
- 0.25 teaspoon black pepper
Instructions
- In a large serving bowl, gently toss together the sweet corn kernels, black beans, cherry tomatoes, diced avocado, red onion, and fresh cilantro.
- In a small glass jar or bowl, whisk together the extra virgin olive oil, fresh lime juice, honey, sea salt, and black pepper until well combined.
- Pour the lime dressing over the vegetable mixture and gently toss to coat all the ingredients evenly.
- Cover the bowl and let the salad chill in the refrigerator for at least thirty minutes before serving to allow the flavors to meld.
