Selecting Your Raw Materials
Not all greenery behaves the same way. You must understand the difference between soft and woody structures.

Achieving Shelf Stability
Clostridium botulinum cannot survive in highly acidic environments. The goal is to drop the pH of your stalks below 4.2 before they ever touch the oil. You achieve this through a simple citric acid soak.
Commercial canning supplies sell pure citric acid. It looks like fine salt.
Mix one tablespoon of citric acid into two cups of water. Stir until completely dissolved. This creates a 3 percent citric acid solution.
Wash your stalks thoroughly. Remove any dirt or bruised sections. Pat them dry.
Place the stalks in a clean glass bowl. Pour the citric acid solution over them. You need about one and a half cups of stalks for every two cups of solution. Weigh the stalks down with a smaller plate or a glass fermentation weight. They must remain completely submerged.
Leave the bowl at room temperature for exactly 24 hours. Do not rush this step. Shorter soaking times result in an unsafe final product.
After 24 hours, remove the stalks. The acid will alter their color slightly. This is normal. This is safe. Pat the stalks entirely dry with a clean towel. Moisture is the enemy of infused oil.
The Equipment Check
Success relies on precision. You need a few specific tools before moving forward.
Acquire a digital probe thermometer. Guessing temperatures leads to ruined oil.
Use a heavy-bottomed stainless steel saucepan. Thin aluminum pans create hot spots. Hot spots scorch the oil and introduce bitter, burnt flavors.
Secure real cheesecloth or unbleached coffee filters. Metal strainers allow microscopic plant dust to pass through.
The Extraction Process
Your stalks are now safe. Next, we extract the flavor.
You need a strict ratio. Use one part acidified stalks to ten parts oil.
Select your oil carefully. Extra virgin olive oil carries its own strong, peppery flavor. It works well with robust woody stalks. For softer vegetation, use a neutral base. Canola oil, grapeseed oil, or safflower oil step back and let the green flavors dominate.
Place the acidified stalks and the oil into a high-powered blender. Pulse until the stalks break down into very small pieces. The friction will begin the extraction process.
Transfer the mixture to your heavy-bottomed saucepan. Place it over low heat. Attach your digital probe thermometer to the side of the pan.
Heat the oil to exactly 140 degrees Fahrenheit. Hold it at this temperature for five minutes. This specific temperature accelerates the infusion process without destroying the delicate volatile aromatics. Heating the oil too high will cook the plant matter and turn the flavor muddy or bitter.
Remove the saucepan from the heat. Let the mixture cool to room temperature.
The Gravity Strain
Clarity separates amateur oils from professional ones. You want a translucent, jewel-toned liquid.
Line a fine-mesh sieve with your clean cheesecloth or coffee filter. Set the sieve over a sterile glass measuring cup.
Pour the cooled oil and pulp mixture into the strainer. Step away.
Gravity takes time. The oil will drip slowly through the filter. This process usually takes about thirty minutes. Never press or squeeze the pulp with a spoon. Forcing the liquid pushes tiny particulates through the filter. Those particulates cloud the final oil.
Once the dripping stops, discard the remaining pulp.
Storage and Maintenance
Transfer your finished oil into a dark-colored glass bottle. Light degrades oil. Heat degrades oil. Store the bottle in a cool, dark pantry or cupboard.
Because you properly acidified the stalks, this oil is completely shelf-stable. For the absolute best quality retention over many months, you can store it in the refrigerator. Olive oil will solidify in the cold. Simply let it sit on the counter for twenty minutes before using.
Always ensure your bottles are completely clean and food-grade before filling. Wash them in hot soapy water and boil them for ten minutes to sterilize the glass.
Culinary Applications
A professional finishing oil changes the dynamic of a dish. You do not cook with this oil. Heat destroys the delicate flavors you just worked hard to extract. You use it at the very end.
